The collection at the Centre Pompidou is sure to please: from Post-Impressionism to Pop Art, the modern and contemporary works are well-displayed and in a building that is itself a work of contemporary art, with exposed pipes and external tubes of escalators that take visitors to each exhibition hall. Best of all, it's open until 10:00 each night, so you can take your time, watch the sunset from the top, and wander around some more.
